The Initial Spark: Bespoke Wedding Menus Crafted for Love

Max and Sasha came to us seeking more than just standard wedding dining; they wanted a culinary experience that was truly them. Our journey began with an initial consultation where we discussed their vision, dietary requirements, and specific preferences. We do not believe in set packages; instead, our expert chefs crafted a bespoke menu tailored entirely to their unique theme and tastes.

The Unforgettable Tasting Session: A Unique Experience

The tasting session is often the turning point where the dream becomes reality. Max and Sasha visited the Four Gables Farm in Ashtead. Upon arrival, no doubt welcomed with a friendly “baa” from our flock of sheep, before enjoying the walk to our purpose-built Shepherd’s Hut, converted into a private dining room.

Max and Sasha enjoyed a glass of champagne on the deck, followed by a tasting of their carefully developed bespoke menu. This immersive experience ensured they could feel confident and engaged in the planning process and acts as a means for couples to get to know our team and how we work together.

For Max and Sasha we recommended and facilitated decor to complement the beautiful, natural setting of Fallow Meadow and the soft amber lighting of the Nordic-style tipis.

You may have seen that we have teamed up with our friends at 34 Bloomsbury for Christmas to create awesome events to celebrate the festivities. We sat down with Head Chef Steve to gather his thoughts and to find out where the food inspiration for our Christmas menus started.

Q – When did the planning start?

We sat down in late July when it was 35 degrees outside to bring our thoughts together around Christmas – in the hospitality world that is when Christmas starts for us. It feels very strange arranging tasting days with cranberry and stuffing when we should be firing up the BBQ!

Q – Tell us more, where did the menu inspiration come from?

We wanted to create “our version” of Christmas, we didn’t want to simply suggest the traditional turkey and xmas pudding. We all sat with a coffee in one hand and a pen in the other to write down our own personal memories of Christmas, given we are all chefs they were mostly around food. You would be on the right lines if you thought “not eating bounties in the celebrations” & “the brandy not flaming properly over the xmas pudding”.

From there we took those concepts and expanded on them until we got to the menus, they are playful takes on festive food concepts.

Q – What is your favorite dish?

For me, it is all about “the purple one” we wanted to take Quality Street and make it into a restaurant dessert. You will find it on our fine dining menus and out of all the creative things we have done this year I am more proud of that.

What is a Four Gables tasting experience?

A Four Gables tasting experience feels like a private restaurant created just for you and your event.

Arrive at our farm located within Ashtead Common and then step into our light filled, Shepherd’s Hut. It feels intimate and relaxed, but everything on the table and in the kitchen has a purpose.

We treat each tasting as a bespoke event in its own right. There isn’t a standard set menu or a one size fits all format. Instead, we design the tasting around your brief. From the moment you arrive, you start to see how the food, styling and service could look and feel for your occasion.

We welcome you with cocktails that reflect the tone of your event. Together, we decide how you want your guests to feel from the first drink.

Wine pairing and tasting conversation
We talk through wine options with you and taste different pairings for each course. We then agree which wines will best accompany your menu and how to structure drinks service for your event, whether corporate, private or a wedding.

Ten canapés, narrowed down to six
We often serve around ten canapés so you can explore different flavours, textures and styles. Together, we refine the selection to six that feel perfect for your event. This process works particularly well for corporate brand events where every detail needs to feel purposeful.

Your menu designed around your taste
We prepare a your menu for you to try, tailored to your preferences and your brief. This may include alternative dishes for each course, so you can compare and choose your final line up.

As we move through the tasting, we listen carefully to your feedback. We adjust flavours, seasoning, presentation and accompaniments and suggest alternatives where helpful. Our aim is that you leave feeling excited and fully reassured that your guests will rave about the experience.

Planning a corporate event that truly impresses your guests is a bit like engineering a supercar. Every detail matters, timing is everything and from the outside it all needs to look elegant and effortless.

We are Four Gables, a luxury food experience and events company based in Surrey, we work with iconic brands across London and the South East to deliver bespoke corporate food and drink that feels considered, elevated and completely on brand.

Ferrari asked us to turn a five day, high profile test drive event into an unforgettable hospitality experience. Across 500 guests, a dolce vita inspired Italian menu that changed every single day and a rolling schedule of 1.5 hour test drive slots, our team delighted guests from the first Italian coffee buzz at 8am to the final “Ciao” at 6pm.

The brief: iconic corporate hospitality to match a luxury supercar brand

Ferrari UK chose Balcombe Place, a private country house in West Sussex, for their exclusive event. Over five days, guests drove the latest Ferrari models in this private, beautiful and scenic setting.

Ferrari asked us to create an Italian inspired corporate dining experience that felt as premium and finely tuned as the cars on the drive.

They chose Four Gables as their catering partner because of our track record in luxury food and drink for brand launches, client hospitality and high touch corporate events. As a Surrey based team working regularly in London and the South East, we understood the expectations of an iconic, global automotive brand and we aligned every plate, drink and mouthful with the Ferrari story.

Designing the guest journey: an Italian menu that evolved every day

Our head chef, Stephen Ferrari, led the culinary team and personally curated the Italian menu for this event. He focused on authenticity, luxury and style, with service that could adapt to constantly changing guest groups across the five days.

We started by mapping the guest journey. Most drivers arrived for registration, enjoyed coffee and a first look at the cars, completed their test drive and then relaxed in the house and grounds. We designed the food and drink to flow naturally around that timetable. Serving half indoors and half outdoors also meant the event could flex quickly if the British weather became less than Italian.

Four Gables were delighted to partner with Watches of Switzerland recently, to curate and choreograph a prestigious Rolex showcase event. A celebration where every detail supported the stars of the show: the watches.

The setting was Balcombe Place, an exclusive-use private country house in West Sussex, approached by a long drive and surrounded by countryside calm. The kind of venue that does not need to raise its voice to make a point.

The brief

Create an elegant, exclusive sales event for Rolex, commissioned by Watches of Switzerland, with three essentials:

  • A curated atmosphere that aligned with Rolex’s brand standards and sense of occasion
  • A guest experience that encouraged circulation, with watches displayed on plinths throughout the venue
  • A canapé-led menu that catered flawlessly for a wide range of dietary requirements, without anyone feeling like they were receiving the “special” plate

In other words: prestige, movement, and precision.

Designing the guest journey

When guests are invited to explore, food has to follow the rhythm of the room.

This evening was designed around circulation. Guests moved through Balcombe Place’s historic reception spaces in a natural flow, pausing at the plinths, reconnecting with hosts, and discovering pieces at their own pace.

Our approach was simple: keep service discreet, keep bites memorable, and keep the experience cohesive. Canapés and small plates were curated and positioned to support movement, rather than interrupt it, so that no one felt anchored to a single spot.

A tasting that set the tone

Before the event, Watches of Switzerland joined us for a tasting experience to shape the menu and the mood together.

This was not just about “what tastes good”. It was about what felt right for the evening’s purpose: the theme of time, the flow between spaces, and the kind of ambience that signals luxury without tipping into formality.

Their feedback afterwards said everything:

“The best tasting experience we had received out of 17 other food and dining experience providers.”

We will take that. Happily.

Dietary requirements, fully covered

With a guest list that included a significant range of dietary requirements, the standard had to be higher than simply “having an option”.

For an event like this, inclusivity is part of luxury. Everyone should feel considered, not accommodated.

We planned the menu and service so that guests with dietary requirements could circulate as freely as everyone else, enjoying food that felt like part of the main experience. No awkward pauses, no spotlight moments, and absolutely no compromise on flavour or presentation.

We were delighted to collaborate with our friends at Plain Jane Events at the launch event of the wonderful new venue 34 Bloomsbury. The team at The 43 Club created a range of wonderful cocktails to reflect the building’s character. When taking your first step through the door at 34 Bloomsbury you will be greeted with a building exuding class and elegance – we think its own description does it perfect justice.

“Welcome to 34 Bloomsbury, a newly renovated 1850’s Georgian townhouse in the heart of Bloomsbury. Combining an elegant contemporary style with a rich heritage, the space offers four rooms across two floors, as well as an urban garden to host a variety of events.”

When we sat down with the team at Plain Jane Events we wanted to create a menu concept that was current and creative. We came up with a 34 mile menu for 34 Bloomsbury, as such all aspects of the menu we sourced with 34 miles of both our HQ and 34 Bloomsbury. This allowed the kitchen team to get creative with the best of the southeast. Our suppliers were incredibly helpful and we wanted to champion their amazing work as such small quotes were in pride of place to explain more about their production methods among much more.

34 Miles Of Amazing Producers

Wild Tenterden Trout – Modern, sustainable fisheries that create amazing produce using traditional methods.

Kevin and Alison Blunt make Golden Cross goats cheese from their own goats milk which are fed only on pasture or hay.

East end crab – pot caught off the Sussex coast.

Using traditional techniques, High Weald dairy produce English feta in West Sussex.

Forman & Son is part of the Forman family of companies spearheaded by H. Forman & Son, the world-renowned smoked salmon business that dates back to 1905 perched on the side of the river Thames.

Meadow Vale in West Sussex allow their birds to roam free – maturing at 7 months rather than inventive farming the quality is second to none.

The Alexander Family have been farming in the Darenth Valley since 1892 when James Alexander brought down 17 milking cows on the train from Ayrshire in Scotland.

During the late 1980s Mark and his parents, Guy and Audrey, established a flock of 150 British Friesland sheep and ever since have produced award winning cheese at High Weald.

Watts Farms create all their produce with sustainability at its core – they are all about soil composition when it comes to courgettes.

For a while now, we’ve been fascinated with virtual reality and its application in the food industry. The technology has been around for a while, but its use in entertainment is definitely still in the infant stages. We love the potential this technology brings to our industry. Food has always been a sensory delight and people are always looking for different ways to enjoy it.  We think virtual reality is the logical next step.

Virtual reality provides an opportunity for you to enjoy all kinds of things about the food you are eating. We can show you where your food came from, it’s provenance and the way it is prepared. All with added theatre and excitement. Your senses will be astonished at the experience. It will become a different way of eating.

‘Seasoned 2019’ is officially launched.

The brochure is the backbone of your food experience.  It will tell you a little bit about us and what we love and give you a place to start for your food selections.

There are a whole range of suggested menus.  We should say that these are guides, not absolutes.  We are not fans of the ‘set’ menu and cannot think of anything worse than churning out the same stuff over and over.  So, once you’ve had a chance to have a look at ‘Seasoned’, come and join us for a chat in the office with a glass of wine and let’s get excited about food and cocktails!

Fundamentally, our job is to create your vision and ensure that your event is everything you want it to be.  Our ethos is food theatre, each of your guests are part of the show and it our job to perform and ensure people remember your event as something truly special.

Last week we headed off to Belgrave Square Gardens in London to cater for an inaugural opera themed dinner.
 

‘Arias under the Stars’ was organised by the Belgrave Square Garden Events Committee in association with The Hari, the Grosvenor and The Berkeley hotels, London.  

We were honoured to be their chosen caterer.

 


Guests started with canapés of Mortadella and Goats cheese parcels; crisp tiger prawns with arrabiata dip; Dorset crab and oregano cones and mozzarella bonbons.  The Italian theme continued with sumptuous a
rtichoke and ricotta stuffed gnocchi served with wild mushroom cream and garnished with shaved Parmesan.  Dessert was mocha tiramisu with milk chocolate foam.

 

Guests drank cocktails courtesy of the magnificent Blue bar at The Berkeley Hotel and Rémy Martin while enjoying the performance of the singers from The Ritz London.

It was a magnificent affair, enjoyed by all and we were delighted to be invited to be a part of it.

A magical night of cinema…

… prosecco* and street food?  Happily, you can enjoy just that at Painshill Park this Friday 17 and Saturday 18 August.  We are teaming up with the fab guys at Painshill to provide you with the perfect evening to share with friends.  Relax in front of the film, shown under the backdrop of the Gothic Temple, and enjoy street food and a full bar provided by Four Gables.

The weather forecast looks perfect and treats to tempt you (along with ‘The Greatest Showman’ on Friday and ‘Star Wars – The Last Jedi’ on Saturday) include pulled pork, Cumberland sausage ‘hot dogs’ and buttermilk fried popcorn chicken, all served with a salad buffet.

‘The Greatest Showman’ is sold out and so, if you have a ticket, we’re really excited to see you then.  Tickets are still available for the Saturday night direct from Painshill Park and you can check out their website here.
